The variety of chile peppers available is quite remarkable. They vary in size, color, and flavor and the level of heat as measured in Scoville heat units. The higher the number of Scoville heat units, the hotter the pepper. Here are the some of the more popular varieties. Chiles may be called different names depending on the grower, retailer, and where they are grown. When handling hot peppers, wear rubber gloves because the oil will burn your skin. And never work with peppers and put your fingers near your eyes.

Peppers are avail-able from mild and sweet to fiery hot and spicy. Like with spices, you have to know how much to add. Just remember that what one person may call mild could be much too hot for another person's taste.
