Nutmeg
is good in baked goods, fruits, custards, eggnog,
punches, sauces, pasta & vegetables like spinach.
Add freshly grated nutmeg at the end of cooking
as heat diminishes its flavor.
Once the mace is removed the nutmeg
is dried on trays for 4 to 6 weeks until the nutmeg
shrinks in its outer shell. The outer shell is then
removed. This lengthy process explains why nutmeg
is expensive.
