Fines
herbes is simply a traditional French blend of
four herbs containing parsley, chervil, chives
and tarragon. This wonderful blend can be made either
from dried herb leaves or fresh herb leaves.
Fines herbs is particularly good with
eggs, poached fish and chicken as well as stemmed
vegetables and butter. Heat diminishes the taste
of this blend, so be sure to add toward the end
of cooking.
