Cardamom

Available in dried pods, loose seed or ground seeds.

The pods will stay fresh for a very long time if stored in a cool, dry place, away from bright light, heat and moisture in an airtight package.

To bring out the best flavor of cardamom seeds before using in savory dishes, the seeds should be dry roasted.

Taste good in cakes, pastries, liqueurs, coffee, curries, meat dishes, fruit salads and custards.

This flavorful spice, native to India, has a long history. Cardamom is an important spice in meat and vegetable dishes in Indian as well as Arabian cuisines. (Usually green and black seed varieties)

In Germany, white carda-mom seeds are used in cookies, cakes and stollen. It is an ingredient in French spice mixes and universally used in pickles. Available ground or in decorticated (shelled) seeds.
