Allspice is a spice
and the name implies that it is all spices, but
it just has the rich taste of nutmeg, cloves, cinnamon
as well as juniper berries. That is why the French
sometimes call it "quatre épices."
In the United States, it is utilized
primarily in baked goods like pumpkin pie, apple
pie, spice cake, and spicy cookies as well as commercial
ketchup, most pickling spices, chutney and preserves. |
