Shallots are small brown onions with papery brownish yellow skins. They have a delicate yet garlicy flavor. Because of their delicate and sweet flavor, shallots are a very good choice for many light sauces.

Look for shallots that are plump and sprout free. They are sold in mesh bags or in bulk. They should be stored like onions in a cool, dry, well ventilated place. They will keep about a month if stored properly.
