Ramps can be sliced thin to give an amazing flavor twist to a spring salad. The very hardy may simply eat them raw. Use them in cooking for a deep earthy flavor.
A papery wrapper leaf may surround the bulb and should be pulled off as you would with scallions. Trim any roots as well as their little button attachment. Once trimmed and cleaned the entire plant is tender and ready to use.

Ramps look like tiny leeks. The greens are delicate and can be used with the white bulbs. The flavor is more assertive and wild. They have a strong onion and garlic flavor which tends to linger on the palate.

In spite of their humble Appalachian origins, ramps can be rather expensive. Ramps can be found at gourmet groceries or upscale produce markets. They are available from early spring to mid-summer.
