Italian Potato Salad

• 6 potatoes, peeled, cooked, diced
• 1 cup diced celery
• 1 cup thinly sliced & chopped red onions
• 1/3 cup fresh parsley, chopped
• 1/4 cup fat-free Italian salad dressing
• 3 tablespoons wine vinegar
• 2 teaspoons salt
• freshly ground black pepper to taste

Combine hot potatoes all other ingredients in a large bowl. Cover and refrigerate for 1 to two hours to let flavors blend.
