Squash Pepper Casserole
Great as a side dish to lighten a "South of the Border" buffet.

• 6 yellow squash, peel & sliced
• 1 small onion, sliced
• 4 medium tomatoes, sliced
• 2 medium green bell peppers, sliced
• 2 teaspoons salt
• 1 1/2 teaspoons black pepper
• 4 tablespoons long-grain white rice
• 4 heaping tablespoons brown sugar
• 1 oz. package Butter Buds®

Preheat oven to 350°F. Place in vegetable oil sprayed casserole dish. Cover and bake for 45 to 50 minutes.
