Glazed Beets
Fresh beets with a hint of orange and ginger.

Servings: 8
Serving Size: 1/2 cup

• 8 medium beets (about 2 pounds)
• 2 teaspoons grated orange peel
• 2/3 cup orange juice
• 1/4 cup brown sugar
• 1/4 cup chopped fresh Italian parsley (optional)
• 1/2 teaspoon ground ginger

Cut the tops from beets, leaving 1 inch of stem. Wash the beets and steam in a basket over boiling water. Make sure to have a tight fitting lid. Heat to boiling, reduce heat to low and steam 1/2 to 1 hour for young beets. Add boiling water as needed. When the beets are done, cool slightly and slip off the skins. Slice or cut into quarters.

Place the beets into a large sauce pan or Dutch oven and add orange juice, peel and brown sugar. Cook uncovered over medium-high heat stirring often, until sauce is reduced and beets are glazed. (About 6 to 7 minutes) Stir in parsley and ginger.
