Fruity Sweet Potatoes
4 to 5 medium
sweet potatoes (2 pounds)
Cook fresh sweet potatoes in boiling water for 30 to 40 minutes or until tender. Drain. When cool, peel and cut into 1/2 inch thick slices.
Alternately layer apple slices and sweet potato slices in 8 x 8 x 2 casserole dish. Sprinkle with brown sugar, cinnamon and salt. Drizzle with apple juice. Cover and bake at 350°F for 35 to 40 minutes. Stir twice during cooking to distribute glaze.
