Peach and Pepper Salsa
Good with all grilled entrees.

Serves  4 (about 2/3 cup each)

 
• 1 1/3 cups coarsely chopped peeled peaches (about 1 pound)
• 1 cup chopped red bell pepper (about 1 medium)
• 1/3 cup thinly sliced green onions
• 1/3 cup chopped fresh arugula
• 1/4 cup fresh lemon juice (about 2 lemons)
• 4 teaspoons chopped fresh oregano
• 1/8 teaspoon salt
• 1/2 jalapeno pepper, seeded and minced
• 1 garlic clove, minced

To prepare salsa, combine  ingredients; toss gently. Let stand 30 minutes before serving.
