Lemon Yogurt Salad Dressing
Great with a simple red onion and spinach salad.

Makes 1 cup

• 1/4 cup fresh lemon juice
• 1 1/2 tablespoons red wine vinegar or balsamic vinegar
• 1 clove garlic, pressed
• Pepper to taste
• 2 teaspoons Dijon mustard
• 1/4 cup plain low-fat yogurt

Whisk everything together except the yogurt. When well blended whisk in the yogurt a small amount at a time.
