Creamy Chive Dressing
Made with fresh chives!

Makes about 1 cup

1/2 cup low fat or light mayonnaise (we used Hellman's) *
2 teaspoons lemon zest (finely grated)
1/4 cup lemon juice (freshly squeezed)
2 1/2 tablespoons red wine vinegar
1/4 cup boiling water
Black pepper (freshly ground to taste)
4 teaspoons chives (freshly chopped)

Mix first 6 ingredients in a small bowl and then stir in chives.
