Spinach Salad
A great salad for company with an orange twist.

Servings: 6

• 6 cup torn spinach leaves
• 1 cup mushrooms, sliced thinly
• 1/3 cup sweet red onion, sliced thinly
• 1 can Mandarin orange segments, reserve juice

• 3 tablespoons rice vinegar
• 1 teaspoon sesame oil
• 2 tablespoons orange liquid from above
• 1 tablespoon honey
• dash of cinnamon

Wash spinach leaves well. Blot dry and tear into bite size pieces. Drain orange segments, reserving 2 tablespoons juice for dressing. Toss spinach, mushrooms, onions and oranges.

Mix all dressing ingredients together and mix well. Spoon over salad. Garnish with toasted sesame seeds if desired.
