Turkey Bean and Corn Taco Soup
Low Calorie But So Satifying

Serves 10 - about 1 cup servings (heaping )

1.25 pounds ground turkey breast
1 medium onion, chopped
1 green bell pepper, chopped
1 - 10 ounce can Rotel tomatoes with green chilies
1 - 15 ounce can no salt added corn, drained
1 - 15 ounce can low sodium kidney beans, drained
1 - 8 ounce can tomato sauce
1 - 16 ounce can refried beans (fat free)
1 packet low sodium taco seasoning
2 1/2 cups low sodium chicken broth

In a large pot, brown turkey, breaking up into small chunks as it browns. When cooked, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes.

Toppings: baked tortilla chips, low fat sour cream, reduced fat cheddar cheese, chopped green onions, or chopped cilantro. Leftovers can be frozen in single portions if desired.
