Smoked Turkey Vegetable Soup
Serve with your favorite low fat bread or crackers.

Serves: 6 - 1 1/2 cup servings

• 2 tablespoons vegetable or olive oil
• 1 large onion, chopped
• 2 cups cubed peeled sweet potato
• 5 cups chicken broth
• 1/2 teaspoon dried thyme leaves
• 1 - 16ounce can great northern beans, drained
• 2 cups coarsely chopped cooked smoked breast of turkey
• 2 cups cut fresh spinach leaves

Heat oil in large saucepan or Dutch oven over medium heat. Add onion and cook 5 minutes. Add sweet, potato, broth and thyme and bring to a boil. Reduce heat, cover and simmer 10 minutes or until potato is almost tender. Stir in beans and turkey; continue heating until hot, about 10 minutes. Stir in spinach just before serving.
