Italian Wedding Soup
Use homemade chicken stock to reduce the sodium content..

Serves 5

• 1.25 pounds ground turkey breast 99% lean
• 1/4 cup panko
• 1/4 cup grated parmesan cheese
• 3 - 4 green onions (white and green part), minced
• 1/4 cup parsley, snipped fine
• 1/4 teaspoon dried basil
• 1 egg
• 1 clove garlic, minced
• 1/2 teaspoon kosher salt
• 8 cups low sodium chicken broth *
• 4 cups chopped spinach
• Fresh ground black pepper
• 1/2 cup orzo or acini de pepe pasta
• 1/3 cup diced carrot

Meanwhile, in a large bowl, combine ground turkey, panko, egg, green onion, parsley, basil, garlic, salt and cheese. Mix until well combined.
Form small meatballs, about 3/4 inch inch in diameter.

In large sauce pan, heat broth to boiling; stir in spinach, orzo, carrot& meatballs. Return to boil;reduce heat to medium. Cook at slow boil for 10 minutes or until orzo is tender, stirring occasionally to keep from sticking.

Serve with additional Parmesan cheese sprinkled on top if desired.
