Italian Wedding Soup
• 1.25 pounds ground turkey breast 99% lean
Meanwhile, in a large bowl, combine ground turkey, panko, egg, green onion, parsley, basil, garlic, salt and cheese. Mix until well combined.
In large sauce pan, heat broth to boiling; stir in spinach, orzo, carrot& meatballs. Return to boil;reduce heat to medium. Cook at slow boil for 10 minutes or until orzo is tender, stirring occasionally to keep from sticking.
Serve with additional Parmesan cheese sprinkled on top if desired.
