Hearty Chicken & Rice Soup
Serve with crusty French bread.
Servings: 10

3 (14.5 ounce) cans low sodium chicken broth
3 cups cooked rice
5 cups cooked and diced chicken
1 (16 ounce) can V8 vegetable juice, no added salt
4 cups frozen corn kernals
1 1/2 cups salsa (mild or spicy - your choice)
1 (4 ounce) can diced green chilies, undrained
1/2 cup chopped green onion
2 tablespoons minced fresh cilantro

Garnish:
Chopped green onion
Chopped fresh cilantro

In a large pot, combine first 9 ingredients. Bring to boil. Reduce heat; cover and simmer for 15 minutes or until heated through. Ladle into bowls and let diners garnish with toppings.
