Downhome Chicken Stew
Serve with crusty Crusty French Bread.

Servings: 4

• 1 Tablespoon vegetable oil
• 1 cup chopped onion
• 1 (14 ounce) can diced tomatoes
• 2 cups chicken broth
• 1 teaspoon minced garlic
• 1 teaspoon thyme
• 1 bay leaf
• 1 teaspoon salt
• 1/2 teaspoon pepper
• 4 cups diced potatoes
• 1 1/2 cups sliced carrots
• 2 cups chopped chicken breasts, 1 inch or less dice)

Heat oil in large pot, saute onions for 2 minutes.

Add next 7 ingredients. Bring to a boil.

Add potatoes, carrots, and chicken. Simmer until vegetables are done, about 30 minutes.

Serve with crusty bread or cornbread.
