Wilted Spinach with Red Onion
Wonderful served with poultry or ham.

Servings: 8

3 tablespoons olive oil
2 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup thinly sliced red onion
6 garlic cloves, thinly sliced
2 (9-ounce) package fresh spinach or 18 ounces spinach bunches, washed, stems removed

Whisk the first 5 ingredients together in alarge bowl. Place dijon mixture in a very large skillet over medium-high heat. Add onion and garlic and saute for 2 minutes. Slowly add spinach, turning and tossing until wilted.
