Sweet Potato Wedges
Excellent with any roasted ham or poultry!

Serves 4

3 sweet potatoes
1 tablespoon olive oil
1 tablespoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Preheat oven to 400°.

Peel potatoes and cut into 1" wedges.

In a large bowl, toss potatoes with oil.

Mix sugar and seasonings together and add to potatoes. Toss until evenly coated.

Spread on a non stick baking sheet* and roast for 30 minutes, turning every 10 minutes until browned and done.

* If you do not have a non stick baking sheet, use nonstick release foil, as these will stick to the pan.
