Sweet Citrus Carrots
A sweet version of carrots that goes well with roasted savory poultry and meat.

Servings: 6

• 4 cups raw carrots, thinly sliced
• 1/3 cup orange juice
• 1/2 teaspoon ginger, chopped
• 1/3 cup orange marmalade
• 1 tablespoon low saturated fat margarine
• Snipped parsley, for garnish (optional)

Combine carrots, orange juice, ginger and marmalade in 1 1/2 quart casserole. Dot with margarine. Bake uncovered at 350F 30 minutes or until carrots are tender.
