Spinach with Lemon
So simple but delightful.

Servings: 8

24 ounces fresh baby spinach
2 tablespoon olive oil
Salt
Juice of 1/2 lemon

Add spinach to boiling water; cook 1 minute. Drain; wring out. Toss with oil and salt. Add lemon juice; toss again.
