5 medium to large cloves garlic, peeled and sliced thin
1 tablespoons olive oil
12 ounces baby spinach
1/2 teaspoon kosher salt
Fresh ground black pepper
Pour olive oil into a very large skillet and add garlic slices. Turn on stove to medium-low heat and allow garlic and oil to heatr. Stir as it begins to sizzle. Remove from oil with a slotted spoon as soon as it turns golden brown. Watch carefully; it burns quickly. Drain on a paper towels.
Add spinach which has been wash well and spun dry to the skillet. Immediately begin turning gently with tongs or a cooking fork. Spinach will immediately begin wilting. Cook and stir only for one minute, adding salt and pepper to taste. Remove spinach to a plate.
