Sliced Roasted Potatoes
This is not only a easy way to fix potatoes, but it is delicious!

Servings: 2

• 3/4 pound baking potatoes, cut into 1/4 inch slices (with or without peel)
• 1 tablespoon balsamic vinegar
• 1 teaspoon virgin olive oil
• Olive oil flavored cooking spray
• 1/8 teaspoon salt
• 1/8 teaspoon fresh ground black pepper

Clean and wash potatoes. You can leave the skin on or peel. Slice potato in 1/4 inch thick slices. Combine potato, balsamic vinegar and oil in a bowl and toss to coat.

Arrange potato slices in a single layer on a baking sheet that has been coated with cooking oil spray. Bake in a preheated 400 degree F. oven for 30 minute or until tender, turning once. Sprinkle with salt and pepper.
