Savory Roasted Sweet Potatoes
A perfect side for any roasted or grilled meat or poultry entree.

Servings: 6

• 4 medium sweet potatoes, peeled and cut into 1 1/2 inch slices
• 2 tablespoons olive oil
• 1 tablespoon fresh thyme, chopped
• 3 cloves garlic, minced
• 1/2 teaspoon crushed red pepper flakes
• 3 - 5 sprigs thyme (for garnish)

Heat oven to 400 degrees F. In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes. Transfer to a rimmed cookie sheet. Garnish with thyme sprigs and bake until tender about 45 minutes. Serve hot.
