Sauteed Sweet Potatoes and Fruit
Serve with your favorite grilled turkey,
chicken or pork.
2 pounds sweet
potatoes, peeled and roughly cut into 1 1/2-inch pieces
1 tablespoons light margarine
1 large tart apple, cored and cut into wedges
1 pear, cored and cut into slices
1/2 cup fresh cranberries
1/4 teaspoon ground nutmeg
1/4 cup honey
In large skillet, saute sweet potatoes in margarine 10 minutes, stirring
often. Add remaining ingredients. Cover and cook 5 minutes. Remove cover
and continue cooking over medium heat until potatoes and fruit are tender,
but not mushy.
