Roasted Zucchini
A delicious way to serve up your favoite squash.

Servings: 4

• 2 medium zucchini
• 1 tablespoon olive oil
• 1 tablespoon fresh oregano or 1 teaspoon dried oregano
• 1/4 cup parmesan cheese, grated
• Salt & pepper to taste

Slice zucchini in 1/4 inch slices. Toss with oil and oregano. Arrange in a single layer on a oil sprayed baking sheet. Sprinkle with parmesan cheese.

Bake, uncovered, at 350 degrees F for 35-40 minutes. Season to taste with salt and pepper.
