Roasted Sweet Potatoes with Onions
Delicious with any poultry or meat dish

Serves 8 - 3/4 cup servings ‹ Back to Side Dishes
   

4 medium peeled sweet potatoes, cut into 2-inch pieces (about 2 1/4 lbs.)
2 medium sweet onions, cut into 1-inch pieces (about 1 lb.)
2 tablespoons extra-virgin olive oil
3/4 teaspoon garlic-pepper blend (see below)
1/4 teaspoon kosher salt

Preheat oven to 425°.

Combine all ingredients in a 13 x 9-inch baking dish, tossing to coat. Bake at 425° for 35 minutes or until tender, stirring occasionally.

Garlic Pepper Seasoning

  • 2 teaspoons Garlic Powder
  • 2 teaspoons Black Pepper
  • 1 teaspoon Brown Sugar
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon dried Parsley

This makes a little over 1 ounce of seasoning blend.
