Roasted Spicy Sweet Potatoes
Just a little kick to spice up your dinner.

Servings: 8

3 large sweet potatoes, peeled and cut into 1 inch cubes (about 6 cups)
2 tablespoons olive oil or canola oil
2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper

Toss potatoes and oil thoroughly.

Combine remaining ingredients and sprinkle over oiled potatoes. Toss again to distribute the spices.

Transfer to a release foil covered baking dish. *

Bake, uncovered, at 400 degrees for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.

COOKS NOTE: This can be made in a regular oiled dish but the release foil makes for easy clean up and no sticking to the pan.
