Roasted Red Potatoes
Wonderful served with poultry or ham.

Servings: 8

2 1/2 pounds red potato, washed, trimmed and quartered
2 tablespoons olive oil
1 tablespoon minced garlic
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 tablespoon white truffle oil
2 teaspoons fresh thyme leaves

Preheat oven to 450°.

Place potatoes on a baking sheet; drizzle or spritz with olive oil, and sprinkle with garlic, salt, and pepper. Toss to combine. Bake at 450° for 35 minutes or until potatoes begin to brown and are tender when tested with a fork. Remove from the oven. Drizzle potatoes with truffle oil, and sprinkle with thyme leaves. Toss lightly to coat.
