Roasted Herb Potatoes
Serve with your favorite grilled entree!

Servings: 4

• 1 pound russet or Idaho potatoes
• 2 tablespoons finely chopped parsley
• 2 teaspoons canola oil
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• 1/4 to 1/2 teaspoon ground red pepper *
• 1/2 teaspoon dried thyme leaves, crushed
• 1/4 teaspoon black pepper

Preheat oven to 400 degrees F. Peel potatoes, and cut them lengthwise into 8 wedges. Place remaining ingredients in a bowl and toss with potatoes until coated.
Place on ungreased oven tray. Bake for approx 50 mins turning the wedges half way through cooking time. Serve immediately.

*Cayenne is rather hot, so if you do not like things a little fiery, tone it down and only use 1/4 teaspoon.
