New Potatoes and Peas
A creamy white sauce dresses up peas and potatoes.

Servings: 6

• 1 tablespoon low saturated fat margarine
• 1 tablespoon flour
• 1/2 teaspoon salt
• 1 cup skim milk
• 2 1/2 cups cooked new potatoes, cubed or very small potatoes, halved
• 1 - 10 ounce package frozen green peas, cooked
• Chopped pimento for garnish, if desired

Melt margarine; blend in flour and salt. Add skim milk; cook until thick and bubbly. Add cooked potatoes and peas to hot mixture and heat thoroughly. Garnish with a little chopped pimento, if desired.
