4 cups raw
potatoes, sliced
1/2 teaspoon dried parsley
1/2 teaspoon salt
1 can low fat cream of mushroom soup
2/3 cup evaporated skim milk
1/4 cup chopped onion
1/4 teaspoon black pepper
1/4 cup reduced fat grated cheddar cheese
Mix all ingredients,
except cheese and potatoes, in a bowl. Pour over potatoes in a baking
dish that has been sprayed with cooking oil spray. Sprinkled with low
fat cheese and bake uncovered for one hour at 350 degrees F.
NOTE: Try other reduced
fat cheeses like Swiss for a different flavor.
