Herb Grilled Zucchini
3 large zucchini
cut into ½ inch thick lengthwise slices Prepare barbecue at medium-high heat or preheat a broiler. Lightly brush zucchini with olive oil. Sprinkle each side of the zucchini slices with oregano, garlic and rosemary. Season zucchini slices with salt (I like to grind sea salt) and and fresh ground pepper. Grill or broil until zucchini is tender, about 4 minutes per side. *You may also use olive oil cooking spray.
