Green Pea Medley
This is a wonderful mix of peas, onion and fresh mushrooms.

Servings: 5

• 1 teaspoons virgin olive oil
• 12 - 16 white pearl onions
• 1/2 cup fat-free chicken broth or defatted chicken broth
• 1 pound frozen peas
• 1 teaspoon low saturated fat margarine
• 1/2 pound button mushrooms, cleaned
• Salt and pepper

Heat the oil and brown the onions slightly. Pour in the broth, cook until the broth is reduced and the onions are still a bit crisp tender 4 minutes, remove and keep warm.

Melt the margarine in the pan, brown the mushrooms until they start weep liquid. Return the onions to the pan. Steam the peas. Add to the onions and mushrooms with peas.

Season with salt and pepper.
