Creamed Peas and Pearl Onions
An old recipe lightened up for healthy eating.

Servings: 4

• 1 - 10 ounce package frozen peas
• 1 cup whole pearl onions
• 1 tablespoon low saturated fat margarine like Smart Balance
• 1 tablespoon flour
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 1 cup 1% milk
• Grated Parmesan cheese (for garnish)

In a covered saucepan cook the peas and onions in boiling water, about 10 minutes or until tender. Drain.

In saucepan, melt butter over low heat. Blend in the flour, salt and pepper. Add the milk and stirring constantly, cook until thick and bubbly.

Pour over the peas and onions, stir gently. Sprinkle with Parmesan cheese if desired.
