Cheesey Italian Tomato and Zucchini
Served fresh breadsticks.

Servings: 4

• 4 medium zucchini
• 1 medium tomato
• 1 tablespoon olive oil
• 1 clove garlic, minced
• 1 large fresh basil leaf
• 1/2 cup part skim low fat mozzarella

Cut 4 medium zucchini and 1 medium tomato into 1/2-inch chunks. Sauté in 1 olive oil with garlic and fresh basil for 5 minutes. Sprinkle with shredded mozzarella. Cook 2 minutes. Season to taste with salt and pepper.
