Buttermilk Chive Mashed Potatoes
So creamy and delicious with NO Butter.

Servings: 6

2 pounds potatoes, peeled and cubed
2 cups water
1 cup chicken broth
6 cloves garlic, peeled
1/2 cup 1% fat buttermilk
1/4 cup thinly chopped green chives
1/2 teaspoon kosher salt
1/8 teaspoon pepper

In a large saucepan, combine the potatoes, water, broth and garlic. Cover potatoes and bring to a boil. Reduce the heat and simmer until potatoes are tender.

In another smaller saucepan, heat buttermilk until warm (do not overheat; the buttermilk will curdle - you just want to warm it).

Drain potatoes and garlic and mash with the warmed buttermilk. Stir in chives, salt and pepper. Adjust seasoning if desired.
