Buttermilk Chive Mashed Potatoes
2 pounds potatoes, peeled and cubed In a large saucepan, combine the potatoes, water, broth and garlic. Cover potatoes and bring to a boil. Reduce the heat and simmer until potatoes are tender. In another smaller saucepan, heat buttermilk until warm (do not overheat; the buttermilk will curdle - you just want to warm it). Drain potatoes and garlic and mash with the warmed buttermilk. Stir in chives, salt and pepper. Adjust seasoning if desired.
