Turkey Panini
Serve warm with your favorite drink.

Servings: 2

• 4 slices honey wheat bread, each 1/2 inch thick
• Olive oil, for brushing (approximately 2 teaspoons)
• 4 tablespoons low fat (2%) mayonnaise
• 6 slices cooked turkey breast, sliced thin (about 6 ounces)
• 1/4 cup julienned roasted red peppers
• 2 reduced fat monterey jack cheese
• 1/2 cup fresh baby spinach leaves
• Salt & freshly ground black pepper, to taste

Preheat an electric panini maker according to the manufacturer’s instructions.
Brush one side of each bread slice with olive oil.

Lay the slices, oiled side down, on a clean work surface. Spread the top of each slice with 1 tablespoon of mayonnaise. Place the turkey on one slice and top with the roasted bell pepper, cheese and spinach leaves. Season with salt and pepper.

Top with the other bread slice, oiled side up. Place the sandwich on the preheated panini maker and cook according to the manufacturer’s instructions until the bread is golden and the cheese is melted, 3 to 5 minutes. Cut sandwich in half and serve immediately while warm.
