Tuna Apple Pockets
Serve with your favorite low fat soup!

Servings: 4

• 6 1/2 ounces solid white tuna in water, drained
• 1/3 cup fat-free mayonnaise
• 2/3 cup apples, chopped
• 1/4 cup shredded carrots
• 1 tablespoon fresh lemon juice
• 2 pita pocket breads, cut in half
• 1 cup leaf or butter lettuce, shredded

In a small bowl combine tuna, mayonnaise, apple, carrot and lemon juice.
Fill each pita half with shredded lettuce and 1/4 of the tuna mixture.
