Smoked Salmon Spread Sandwich
Serve with your favorite beverage!

Servings: 2

• 2 ounces smoked salmon
• 1/3 cup fat-free cream cheese, softened
• 1 teaspoon lemon juice
• 2 teaspoons chopped fresh dill *
• 2 teaspoons minced green onion
• 4 slices fresh bakery pumpernickel bread
• 4 slices tomato
• 8 slices cucumber

Combine first 3 ingredients in a food processor; process until smooth. Spoon into a bowl; stir in dill and onion.

Divide salmon mixture evenly between 2 bread slices; top each with 2 tomato slices, 4 cucumber slices, and 1 bread slice. Store in small zip-top bags in refrigerator.

* May substitute 1/2 teaspoon dried dill
