Salmon Sandwiches
Don't leave out the capers - try it you will like it!

Servings: 3

• 1 - 7 1/2 ounce can Alaskan salmon, drained, bones and skin removed
• 2 tablespoons low-fat mayonnaise
• 1/2 teaspoon Cholula® hot sauce or other brand (more or less to taste)
• 1 tablespoon lemon juice
• 1 tablespoon capers, well drained
• 2 tablespoons green onion, chopped
• 3 leaves butter or leaf lettuce
• 6 slices dark rye bread

In a mixing bowl, combine the salmon, mayo, hot sauce, lemon juice, capers and chives. Place 1/3 of the salmon mixture on a slice of bread. Top each with a lettuce leaf, then remaining slice of bread.
