Roast Beef Sandwiches w/ Horseradish Dressing
Serve with green olives or picke spears!

Servings: 2

• 3 tablespoon light sour cream
• 4 teaspoons prepared horseradish
• 4 slices whole wheat bread, toasted if desired
• 2 leaves of Boston or green leaf lettuce
• 6 ounces thinly sliced deli roast beef
• 4 (1/4-inch-thick) slices ripe tomato
• 2 thin slices of red onion, separated into rings

Combine sour cream and horseradish. Spread horseradish cream dressing on two bread slices. Top with lettuce leaf, roast beef, tomato slices, onion, and remaining bread slices. Garnish with olives or pickle spears if desired.
