Red Pepper and Roasted Turkey Sandwich
Serve with a cup of your favorite low fat soup.

Servings: 4

• 1/3 cup fat-free mayonnaise or salad dressing
• 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
• 1/4 teaspoon garlic powder
• 8 slices sourdough bread, 1/2 inch thick
• 8 large spinach leaves
• 1/2 pounds sliced oven roasted turkey breast
• 1/2 cup chopped drained roasted red bell peppers

In small bowl, mix mayonnaise, basil and garlic powder. Spread on one side of each bread slice.

Layer spinach, turkey and bell peppers on 4 slices of bread. Top with remaining bread.
