Pickled Veggie Tuna Sandwiches
Adapted from a Cooking Light Recipe - with changes

Servings: 4

• 1/2 cup chopped red bell pepper
• 1/4 cup Fancy Mild Mixed Giardiniera, drained and chopped (we used Vigo Giardinera)
• 1/4 cup finely chopped green onions (green and white parts)
• 1/4 cup low fat mayonnaise (we used Helmans)
• 1 (12-ounce) can albacore tuna in water, drained and flaked
• 8 (1-ounce) slices low calorie bread (we used Natures Own 40 Calories Honey Wheat Bread)
• 2 cups trimmed spinach

Combine the first 5 ingredients in a medium bowl. Spread 1/2 cup tuna salad over 4 bread slices. Top each slice with 1/2 cup spinach and 1 bread slice.

Per Serving: 201 Calories; 3g Fat (13.5% calories from fat); trace Saturated Fat; 20g Protein; 25g Carbohydrate; 7g Dietary Fiber; 15mg Cholesterol; 505mg Sodium. Exchanges: 1/2 Vegetable.
