Olive Albacore Sandwiches
Serve with baked chips if desired.

Servings: 3

1 (7 ounce) can solid white albacore tuna, packed in water, drained well
1/4 cup low fat mayonnaise, plus 3 tablespoons for sandwiches
10 green olives, finely chopped
1/4 cup chopped sweet onion (like Vadallia)
3 Butter lettuce leaves
6 slices whole wheat bread

Flake the tuna between your fingers, and add mayonnaise. Mix well. Add olive and onion. Mix well.

Spead each slice of bread with 1/2 tablespoon mayonnaise.

Put lettuce on bread. Add tuna mixture, and top with bread.
