Chipotle Roast Beef Sandwiches
Serve with baked chips if desired.

Servings: 2

• 4 sliced whole wheat bread
• 8 ounces thinly sliced deli roast beef
• 1 medium tomatoes, thinly sliced
• 1/2 cup baby spinach, stems trimmed
• 1/2 cup shredded lettuce
• 1/2 green bell pepper, thinly sliced
• Salt and pepper to taste

Chipotle Mayo
• 1/2 cup mayonnaise
• 3 tablespoons chopped fresh cilantro
• 1 green onion, minced
• 1 tablespoon minced canned chipotle chilies in adobo
• 1 teaspoon fresh lime juice
• Salt to taste

Combine mayonnaise, cilantro, green onion, chipotle chilies and lime juice in Spread bottom pieces of bread with half of mayonnaise. Top with roast beef, tomatoes and lettuce, baby spinach. Sprinkle with salt and pepper if desired. Spread remaining dressing on top pieces of bread. Press bread, dressing side down, onto other half.
