Zippy Beet Salad
Spices and orange juice add zip to this simple salad.

1 pound fresh beets, peeled and slicedZippy Beet Salad
3/4 cup orange juice
1/8 teaspoon ground ginger
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
Generous dash of black pepper
Generous dash of ground cloves
2 tablespoons cider vinegar
1 mediums weet Vidalia onion, thinly sliced

Slice beets thinly, no more than 1/4 inch thick. Place beets, orange juice, salt and spices in a 2 quart saucepan and bring to a boil. Reduce heat, cover and simmer for 25 minutes or until beets are tender. Remove from heat and let cool slightly. Add sliced onions and onions and toss. Cover and refrigerate overnight. Serve on a bed of mixed baby salad greens.
